About our pasta:

Our pasta is small batch, extruded, cut with brass dies, and made with durum wheat. What does this all mean? Our food is artisanal and made in small batches, no more than 7 pounds at a time and we focus on the flavor and the execution of the noodles one batch at a time. Extruded pasta is dough that is pressed through a disc that helps shape the pasta. We use brass dies for these discs which gives the noodles a rough edge. This allows the noodles to hold onto sauce and other pasta ingredients so you can create premium dishes. We also use semolina flour which is derived from durum wheat. It is a course flour that gives the pasta a golden color. This flour is the standard for all noodles in Italy.

We offer our noodles in a variety of shapes and flavors. Each combination is made by hand and we promise to have your order made within 1 week of your order date, keeping the flavors as fresh as possible in our carefully dried pasta.
